Torihana Tei Ramen 鳥華亭

Yesterday my colleague, Joshua, was heading to a ramen shop for food prior to his football game. He went for Kamitora Tonkotsu 神虎麺商店 and he made positive comments on it. Today, I planned for ramen or noodle.  The strategy was if there would be a seat at Torihana Tei Ramen 鳥華亭 then I will go for it, else a sliced noodle (video) shop not far away.   I always saw a queue in front of Torihana Tei Ramen at the lunch hours. But today, a big surprise: no queue and the bar table was totally empty. Yeah!

Torihana Tei Ramen 鳥華亭 is tucked away on a quiet street, but the giant red lantern at the entrance is so eye-catching which is impossible to miss. The rectangular-shaped shop features an open kitchen on one side and 17 seats on the other. The menu is a simple one-pager that lists five different chicken ramen bowls and three side dishes. You show your preferences by ticking on the order sheet, which allows you to choose the type of noodles, the firmness as well as whether you want onion.


Without too much thinking I opt for the Number 1 premium chicken ramen. The soup base is excellent. It is creamy and rich in chicken flavour, without being too oily. The secret is to simmer a generous amount of chicken feet and breast bones for at least 12 hours. Chicken slices are not rough nor chewy. The additions of deep fried lotus roots and asparagus are excellent. Do eat the lotus roots quickly without dipping it into the soup to enjoy the crispiness. I like very much the egg. Light fragrance of soy and intensive flavor of egg yolk. Fabulous!  
Torihana Tei Ramen definitely worth a return visit.  Probably, the other chicken ramen infused with seafood flavor or the jumbo size to try the different ingredients but not the spicy ramen.
